My kids love meatloaf. Ground beef, egg, a little ketchup, dried chopped onion (just because it's easier than actually chopping an onion). Pour some more ketchup or tomato sauce on top and bake for 30 min.
Crockpot meals are easy, too. Throw everything in in the morning, and when you come home, it's ready. Chuck roast, potatoes, celery, carrots, beef broth and a package of the onion soup mix for flavor. Set it on low and it will be ready that evening.

I was going to recommend you ask Kristen, but she has beat me to it!! (You probably know already but she started a cooking blog. Maybe she can give more recipes on that!) Crockpot meals are great too!

I make whole wheat pancakes at least once a week. Last night, I mashed a banana in with the batter, and my kids never knew the difference. Serve with fresh fruit and turkey bacon. Easy and very yummy, if you like breakfast for dinner, that is.

Also, it's easy to keep the ingredients for pizza on hand. Even if you don't make your own dough, you can keep those refrigerated ones or Boboli bread on hand. Plus, the kids love helping with pizza assemmbly! And, I hide grated zucchini and carrot in my pizza sauce, then puree with my blender. Joshua loves veggies, but I typically have to make Caleb "eat four bites" every night. Not pizza night--He has no clue he's even eating veggies!
